NEWTOWN, Conn -- Pastry chef Matthew Kirshner, who has served up his delicacies at such world-renowned spots as the Russian Tea Room, is the newest member of the team at Café Xpresso in Newtown.
Kirshner is passionate about the pastry arts and has a decade of experience, including time at the Essex House Hotel in New York City.
“Matt has great experience and drive and with him on board we’re preparing some new creations based on his techniques in the kitchen,” says chef Bob Schlump, owner of Café Xpresso.
At a young age, Kirshner decided to become a pastry chef as he learned about baking from his grandmother and mother. When he fell in love with baking, he knew he had found his calling.
Kirshner was born and raised outside of Philadelphia in Dresher, Pa., where his parents owned a small coffee distribution company. Growing up in the coffee world, Kirshner believed there would be a great dessert to go with every great cup of coffee.
Kirshner attended the Art Institute of New York City to earn a degree in pastry arts and had the good fortune to work with masterful pastry chefs from around the world. Most recently, Kirshner worked at the Roger Sherman Inn, Tom Tom Bakery and Wave Hill Breads.
Some of the new delicacies available at Café Xpresso are a decadent flourless chocolate cake covered in chocolate ganache and Cruffins, a muffin made from croissant dough and then filled with Chef Bob’s mascarpone pastry cream. Custom cakes for birthdays and all occasions are also available.
A Newtown resident of three years, Kirshner and his wife send their four young children to Hawley Elementary School and Wesley Preschool. His favorite thing about living in Newtown is the sense of community and neighborly atmosphere. He enjoys visiting with guests at Café Xpresso whom he knows from around town.
“I’ve always wanted to work in an area where I live, too,” he said. “I’m exciting about joining the Café Xpresso team because it’s a great opportunity for me to express myself through pastry.”
